SALSA / BRC Accreditation
The problem
SALSA is a robust and effective food safety certification scheme which is appropriate for smaller food producers and processors. Approved suppliers can demonstrate that they operate to standards that are recognised and accepted across the industry and exceed the minimum standards expected by enforcement authorities. SALSA approval is only granted to suppliers who are able to demonstrate to an auditor that they are able to produce safe and legal food and are committed to continually meeting the requirements of the SALSA standard.
Steve was called in to assist an ambitious start-up company wishing to achieve SALSA accreditation for their new to market organic vegetarian pasta product.
The solution
Steve worked with the company from the outset, advising on sourcing organic suppliers, design and location of production site, process flow, food safety, purchase of suitable processing equipment, machinery to validate quality and safety of product and the registration and documentation to present the company ready for the SALSA auditor. Steve designed a HACCP based food safety management system and Due Diligence records to verify the safe production of pasta for international and domestic sales.
The outcome
The company were audited and approved by the Organic Food Federation and achieved SALSA accreditation with very few minor non-conformances against the Standard. These have been fully addressed and the company continues to grow with significant sales likely to lead to increasing production with the purchase of new equipment.
